Er worden geen nitrieten, smaak- of kleurstoffen toegevoegd. De geselecteerde achterhammen worden aangeleverd en stuk voor stuk ge\u00efnspecteerd op hun kwaliteit. Elke ham wordt gewogen en gelabeld om de traceerbaarheid te verzekeren. Om de verse hammen na het transport op gelijke kerntemperatuur te brengen, worden ze 1 tot 2 dagen geacclimatiseerd in de koelkamer.[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;2. Nadat het resterende bloed uit de aderen werd geperst wrijft men het zwoerd (het vel van de ham) en het vlees in met zout. De zoutmachine strooit een extra laagje droog zeezout op de hammen, die vervolgens manueel worden bijgezouten. Daarna verdwijnen ze voor een week in de zoutkamers bij een temperatuur van 2 tot 4 \u00b0C. Het zout onttrekt vocht uit het vlees, lost op en dringt in het vlees. Het onttrokken water verdampt.[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;3. Het vlees wordt door middel van masseren opnieuw soepel gemaakt, waardoor het gemakkelijker zout opneemt. De varkenshouders van weleer deden dit door de hammen te rollen. Tegenwoordig bestaan er speciale machines voor. Na het masseren rusten de hammen opnieuw gedurende 2 weken.[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;4. Bij de Ganda Ham blazen we de drooggezouten hammen schoon en worden ze opgehangen aan kaders, dus niet gestapeld zoals bij het industri\u00eble pekelproces. Het vlees rijpt 2 maanden lang in gekoelde rijpkamers. Ondertussen dringt het zout tot diep in de ham. Tijdens het rijpen verdampt het water aan de oppervlakte zodat zich zeer fijne zoutkristallen vormen aan de buitenzijde. Deze worden op het einde van het rijpingsproces weggespoeld tijdens een soort douchebeurt.[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;5. De Ganda Ham wordt opgehangen in lichtgeventileerde droogkamers bij een temperatuur van ongeveer 17 \u00b0C. De combinatie van koelelementen, ventilatie en constante temperatuur laat de hammen verder uitdrogen. In deze droogkamers bereikt men na jaren een optimaal bacteriologisch evenwicht. Zo kunnen de natuurlijke fermenten hun werk doen en een traag, enzymatisch proces op gang brengen.[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;6. Daarom wrijft men de snijkant bij het been in met een mengsel van smout (reuzel), bloem, peper en zout. De Ganda Ham wordt verder gedroogd tot hij minimum 10 maanden oud is. Tijdens het drogen wordt de kwaliteit van de hammen continu gecontroleerd. De rijpingsmeester prikt met een priemvormig paardenbeen in het vlees. Wanneer hij het puntige bot uit het vlees trekt en onder de neus houdt, vertelt het rijke aroma de staat van rijping.[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;7. Grotere hammen rijpen verder tot ze 12 \u00e0 14 maanden oud zijn.<\/p>\n<p>De hammen zijn nu klaar om, met of zonder been, verkocht te worden. Het ontbenen van de hammen gebeurt in de \u2018uitbeenzaal\u2019. Hier worden de hammen achtereenvolgens ontdaan van het been, opgekuist (om de bijsmaak van geoxideerd vet tijdens het droogproces te verwijderen), dichtgenaaid, in een vorm geperst, voorzien van het brandmerk GANDA en vacu\u00fcm verpakt. Hierbij krijgt elke ham nogmaals een rigoureuze kwaliteitscontrole. Hammen die niet voldoen worden onherroepelijk verwijderd.[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;8. Daarna worden ze in bakken of kartons gelegd en verzonden via groothandelaars naar restaurateurs, slagers en supermarkten.
